Stir-fried Watercress With Almonds and Ginger
- 4 tbsp flaked almonds
- 2 tbsp sesame oil
- 450g/ 1lb watercress, chopped
- 5cm/ 2in piece root ginger, finely chopped
- 4 tbsp miso
- 4 tbsp rice vinegar
Heat a wok or pan and briefly dry-fry the almonds, then set aside. Add the oil to the wok and stir-fry the watercress and ginger for 3 minutes. Add the miso, rice vinegar and the almonds, stir well and serve immediately.
Creamy Watercress Soup
- 55g/ 2oz butter
- 2 bunches watercress, chopped
- 1 onion, diced
- 25g/ 1 oz/ ¼ cup plain flour
- 500ml/ 17fl oz/ 2 cups milk
- 455ml/ 16fl oz/ scant 2 cups vegetable stock
- 6 tbsp single cream
Melt the butter in a pan and gently fry the watercress and onion for 3 minutes. Stir in the flour and cook for 1 minute. Slowly add the milk and then the stock, while stirring. Bring to the boil and stir until thickened. Cover and simmer for 30 minutes. Whizz the mixture in a blender, then add the cream and reheat gently without boiling. Serve.
Watercress Chicory and Orange Salad
- 4 chicory
- Juice of 1 lemon
- 200g/ 7oz watercress stalks discarded
- 4 oranges, peeled
- 2 carrots, peeled and grated
- 150ml/ 5fl oz/ ⅔ cup apple juice
- salt and ground black pepper
Slice the chicory, place in a large salad bowl and squeeze over the lemon and apple juice. Roughly chop the watercress and quarter the oranges. Combine them in the bowl with the remaining ingredients, season and toss well. Serve immediately.
