Easy Sweet Potato Recipes

SWEET POTATO MASH

  • 4 sweet potatoes, peeled and chopped
  • 3 carrots, peeled and chopped
  • 150g/ 5 ½ oz/ 1 cup frozen peas
  • 30g/ 1oz butter
  • Salt and ground black pepper

Steam the sweet potatoes, carrots, and peas for 20-25 minutes until soft. Transfer to a bowl, add the butter and salt and pepper and mash until creamy. Serve instead of mashed regular potatoes.

SWEET POTATO SUMMER SALAD

  • 3 sweet potatoes baked in their skins, peeled and diced
  • 4 spring onions, trimmed and sliced
  • 2 celery sticks, trimmed and sliced
  • 70g/ 2 ½ Oz/ ½ cup walnuts, chopped
  • 1 green pepper, deseeded and sliced
  • 200ml/ 7fl oz crème Fraiche
  • 2 tbsp white wine vinegar

Place all the ingredients in a large salad bowl and mix together thoroughly. Serve as a side dish.
