Simple Raspberry Recipes
- 400g/14oz/3 ¼ cups raspberries
- 1 tsp vanilla extract
- 300g/1O ½ oz/scant
- 1 ¼ cups plain bio-yogurt
- 6 tsp sugar
Place the raspberries in 4 ramekins or small dishes. Combine the vanilla extract and yogurt, and spoon the mixture over the fruit. Cover the surface of each ramekin with the sugar, and then caramelize under a very hot grill for 2 minutes, or until crisp. Allow to cool, and then serve.
- 450g/1lb/3 ½ cups raspberries
- 1 tbsp fruit sugar
- 1tsp lemon juice
Put all the ingredients in a food processor and blend. Pour the mixture through a fine sieve into a bowl, pressing on the solids. Serve the sauce on top of ice-cream or other desserts.
