GARLIC NASH

  • 6 potatoes, peeled and diced
  • 5garlic cloves
  • 300ml /10 ½ fl oz/ scant 1¼ cups milk or soya milk
  • 4 tbsp olive oil
  • 1 tsp salt
  • a pinch of ground black pepper
  • 1 tsp ground nutmeg

In a heavy-based pan, boil the potatoes and garlic in the milk until tender, topping up with enough water to cover them. Drain well. Add the olive oil, salt, pepper and nutmeg, then mash until smooth. Serve as a side dish.

POTATO JUICE for healthy digestion

  • 250g/9oz potatoes
  • Lemon juice, to taste

Scrub and peel the potatoes, then chop into bite-sized pieces before whizzing in a blender to a fine puree. Add lemon juice to taste. Take 2 tablespoons before each meal. Do not take for longer than 24 hours.

TUNISIAN POTATOES WITH EGGS

  • 4 eggs
  • 450g/1lb potatoes, diced
  • Juice of 1 lemon
  • 2 tbsp ground cumin
  • 2 tbsp olive oil
  • ½ tsp harissa

Boil the eggs for 10 minutes. Leave to cool, then peel and chop. Meanwhile, boil the potatoes for 5-10 minutes until tender, and drain. Mix together the remaining ingredients and pour over the potatoes. Place on top of the eggs and serve immediately.
