Easy Pine Nuts Recipe
RED PEPPER BRUSCHETTA
- 4 red peppers, deseeded and sliced
- 1 garlic clove, crushed
- 1 tbsp balsamic vinegar
- 5 tbsp olive oil
- 1 wholemeal loaf, thickly sliced
- 200g / 7oz goats’ cheese, sliced
- 55g / 2oz/ ⅓ cup pine nuts, toasted
Grill the peppers until soft, then place in a bowl and toss with the garlic, vinegar and 4 tbsp of the oil. Drizzle the remaining oil over the bread, and place in a hot oven to bake until golden on each side, turning once. Top each slice with goats’ cheese, peppers, and pine nuts.
