Easy Onion Recipes

FRENCH ONION SOUP

  • 4 tbsp olive oil
  • 750g/ 1 ½ lb onions, thinly sliced
  • 2garlic cloves, crushed
  • 2 tbsp apple juice
  • 1.2 l/ 40fI oz/4 ¾ cups beef stock
  • 300ml/ 10ft oz/ 1 ¼ cups dry white wine
  • Salt and ground black pepper

In a heavy saucepan heat the oil. Add the onions, garlic and apple juice, and cook for 5-6 minutes, stirring constantly. Turn down the heat and cook for about 20 minutes. Pour the stock and wine into the mixture and season with salt and pepper. Bring to a simmer and cook uncovered for 1 hour. Pour into bowls and serve.

ONION COMPRESS (for inflamed wounds, headaches & earaches)

  • 4 onions, finely chopped
  • White muslin or linen bag

Lightly steam the onions and wrap in the white muslin or linen bag. Apply to the inflamed area or aching parts. Once the compress cools down, replace it with another. Repeat up to four times in succession, or until the symptoms are alleviated.
