Easy Lettuce Recipes
PEAS AND LETTUCE
- 55g/ 2oz butter
- 350g/ 12oz/ 2 ¼ cups peas
- 8 large cos lettuce leaves, cut into strips
- 4 tbsp stock or water
- 1 tsp ground black pepper
Melt the butter over a gentle heat and add the peas and lettuce. Add the stock or water and bring to the boil, then simmer, covered, for 5 minutes. Season with pepper and serve.
GREEN SALAD SUPREME
- 3 large handfuls mixed lettuce leaves
- ½ cucumber, sliced
- 100g/ 3 ½ oz feta cheese, cubed
- 1 avocado, pitted, peeled and chopped
- 2 tbsp salad cress
- 2 tbsp chopped chives
- 2 tbsp olive oil
- 1 tbsp cider vinegar
- Salt and ground black pepper
Put all the ingredients in a large bowl, toss well and serve immediately.
CHEESY GRILLED LETTUCE
- 1 cos lettuce
- 1 tbsp olive oil
- 200g/ 7oz Camembert cheese
- 2 tsp balsamic vinegar
Preheat oven at 220°C/425°F/gas mark 7. Cut the lettuce lengthways into quarters, brush with the oil and grill for 2 minutes on each side. Arrange in a shallow ovenproof dish, top with thin slices of Camembert and drizzle with the vinegar. Bake for 5 minutes until the cheese is bubbling, then serve.
