Easy Lettuce Recipes

PEAS AND LETTUCE

  • 55g/ 2oz butter
  • 350g/ 12oz/ 2 ¼ cups peas
  • 8 large cos lettuce leaves, cut into strips
  • 4 tbsp stock or water
  • 1 tsp ground black pepper

Melt the butter over a gentle heat and add the peas and lettuce. Add the stock or water and bring to the boil, then simmer, covered, for 5 minutes. Season with pepper and serve.

GREEN SALAD SUPREME

  • 3 large handfuls mixed lettuce leaves
  • ½ cucumber, sliced
  • 100g/ 3 ½ oz feta cheese, cubed
  • 1 avocado, pitted, peeled and chopped
  • 2 tbsp salad cress
  • 2 tbsp chopped chives
  • 2 tbsp olive oil
  • 1 tbsp cider vinegar
  • Salt and ground black pepper

Put all the ingredients in a large bowl, toss well and serve immediately.

CHEESY GRILLED LETTUCE

  • 1 cos lettuce
  • 1 tbsp olive oil
  • 200g/ 7oz Camembert cheese
  • 2 tsp balsamic vinegar

Preheat oven at 220°C/425°F/gas mark 7. Cut the lettuce lengthways into quarters, brush with the oil and grill for 2 minutes on each side. Arrange in a shallow ovenproof dish, top with thin slices of Camembert and drizzle with the vinegar. Bake for 5 minutes until the cheese is bubbling, then serve.
