SESAME KALE

  • 1 tbsp sesame oil
  • 2 garlic cloves, crushed
  • 450g/ 1lb kale, roughly chopped
  • 1 tsp soy sauce
  • 1 tbsp toasted sesame seeds

Heat the oil in a pan and sauté the garlic for 30 seconds over moderate heat. Add the kale leaves and 2 tablespoons of water and increase the heat, stirring frequently until the water has evaporated. Stir in the soy sauce and the sesame seeds just before serving.

KALE WITH GARLIC AND RED PEPPERCORNS

  • 450g/ 1lb kale, chopped
  • 2 tbsp extra virgin olive oil
  • ½ small onion, finely chopped
  • 2 garlic cloves, crushed
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ¼ tsp crushed red peppercorns

Put the kale in a saucepan and cover with boiling water. Cook for 2 minutes. Drain and press until barely moist. Put the oil in a large pan and sauté the onion and garlic over low heat for 4-5 minutes. Stir in the kale, salt, pepper, and peppercorns and cook over medium heat for 3-4 minutes. Serve immediately.
