Easy Grapefruit Recipes
- 2 grapefruit, halved, flesh removed and chopped
- 1 avocado, pitted, peeled and cubed
- 2.5cm/ 1 in piece root ginger, chopped
- 1 pear, peeled, cored and cubed
- 1 green pepper, deseeded and chopped
- 2 black olives, pitted and halved
- 2 tbsp lemon balm, finely chopped
Mix the grapefruit flesh with the avocado, ginger, pear and green pepper, and divide the filling among the 4 halves. Garnish with the olives and lemon balm, and serve.
GRAPEFRUIT AND CHICKEN SALAD
- grated zest of 2 grapefruit
- 4 tbsp honey vinaigrette
- 35Og/ 12oz/ 2 cups cooked chicken, shredded
- 2 grapefruit, unpeeled and cut into wheels
- 4 sweet peppers, deseeded and cut into rings
Add the grapefruit zest to the vinaigrette. Pour it over the chicken pieces. Put the grapefruit wheels and the pepper rings into a dish and pile the chicken on top.
GRAPEFRUIT BEAUTY MASK (To tone the skin)
- 1 small grapefruit, peeled and broken into segments
- 1 small pot natural yogurt
Remove the pith and pips from the grapefruit segments and put them with the yogurt in a blender. Whizz to make a paste. Put the mixture in a bowl and leave in the fridge for 1 hour. Apply to the face and leave for about 10 minutes. Gently remove with cool water.
CITRUS FRUIT SALAD
- 3 large handfuls mixed salad leaves
- 2 tbsp chopped parsley
- 1 tbsp chopped coriander
- 1 tbsp sunflower seeds
- ½ pink grapefruit
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp orange juice
Put the salad leaves, parsley, coriander and sunflower seeds in a large bowl. Cut the grapefruit into segments and add them to the bowl. Drizzle the olive oil and citrus juices over the salad, then toss gently and serve immediately.
- 4 ruby grapefruit
- 2 tbsp honey
- 1 tbsp chopped fresh mint
Squeeze the juice of 1 Grapefruit and grate 1 teaspoon of the zest; set aside. Warm the honey in a pan. Add the juice and zest. Mix well. Peel the 3 remaining grapefruit and separate into segments. Arrange on a plate and cover with the marinade. Leave to stand for 15 minutes. Sprinkle with the mint.
