Part of the parsley family, the fennel plant and seeds have ancient healing properties and are also popular culinary ingredients. Used particularly in French and Italian cuisine, fennel boasts a host of anti-aging properties.

Rutin strengthens blood capillaries, thereby improving poor circulation, while quercetin inhibits inflammatory conditions such as asthma. Anethole is anti­spasmodic, preventing the intestinal spasms often experienced by people with irritable bowel syndrome.

Fennel Recipes

SAUTEED FENNEL

  • 1 tbsp olive oil
  • 2 fennel bulbs, trimmed and finely sliced
  • 8 cloves garlic, crushed
  • Ground black pepper
  • Wholegrain bread and cheese, to serve

Heat the oil in a pan, add the fennel and garlic and gently fry until slightly soft. Season with black pepper. Serve as an accompaniment or with some wholegrain bread and cheese.

FENNEL MOUTHWASH (to protect teeth & gums)

  • ½ tsp fennel seeds
  • ½ tsp ground cloves
  • 2 tbsp pure grain alcohol or good-quality vodka
  • 250ml/ 9fl oz/ 1 cup distilled water paper coffee filter

In a bowl, mix the spices into the alcohol. Cover and leave for 3 days, then pour through the coffee filter placed in a strainer. Add the water. Store in a sealed bottle for 6 weeks. Gargle with 1 tablespoon at a time, as a mouthwash.

FENNEL SEED INFUSION (to cleanse & tone the skin)

  • 2 tsp fennel seeds, crushed
  • 2 thyme sprigs, crumbled, or ½ tsp dried thyme
  • 12Sml/ 4fl oz/ ½ cup boiling water
  • Juice of 7 lemons

In a bowl, combine the fennel seeds and thyme, and cover with the boiling water. Add the lemon juice and steep for 15 minutes. Strain, and when cold, store, covered, in a jar in the fridge. Dab evenly on the face and neck every morning with cotton wool, and then rinse off with warm water.
