Cucumber Salad

GARDEN SALAD

  • 100g/ 3 ½ OZ baby spinach leaves
  • 1 cucumber, chopped
  • 8 radishes, trimmed and thinly sliced
  • 2 carrots, peeled and thinly sliced
  • 1 spring onion, trimmed and chopped
  • 2 tbsp chopped parsley
  • 1 tbsp olive oil
  • Juice of ½ limes

Combine the vegetables and parsley in a large bowl. Pour over the olive oil and lime juice, and toss well. Serve immediately.

CUCUMBER AND MINT SALAD

  • 4 tbsp chopped mint, plus a few leaves to serve
  • 1 large cucumber, chopped
  • 2 celery sticks, trimmed and chopped
  • 2 tsp white wine vinegar
  • 8 tbsp/ ½ cup plain bio-yogurt

Mix together the chopped mint, cucumber and celery in a serving bowl. In a separate bowl, whisk the vinegar into the yogurt. Pour the dressing over the salad, add the mint leaves and serve.

CUCUMBER LOTION (to cleanse the skin)

  • ½ small cucumber
  • 5 mint leaves
  • 4 tbsp milk
  • 2 drops grapefruit seed extract

Peel and chop the cucumber. Remove the mint leaves from their stalks and chop. Put both in a food processor with the milk and whizz until smooth. Pour the mixture into a saucepan and bring to the boil. Reduce the heat and simmer for 2 minutes, then allow cooling. Pour into a clean bottle and add the grapefruit seed extract. Store in the fridge and use within a week.
