Easy Brazil Nut Recipes
GREEN BEAN AND BRAZIL NUT STIR-FRY
- 2 tbsp sesame oil
- 1 onion, chopped
- 1 tbsp grated fresh ginger
- 2garlic cloves, crushed
- 200g/7oz asparagus spears
- 200g/7oz green beans
- 100g/3 ½ oz/ ¾ cup Brazil nuts, sliced
- 2 tbsp soy sauce
Heat the sesame oil in a wok over high heat until it is sizzling hot, and then add the onion, ginger, and garlic. Stir-fry for 2 minutes, and then add the asparagus spears, green beans, and Brazil nuts. Continue to stir-fry for a further 5 minutes, and then add the soy sauce. Reduce the heat and cook slowly until the asparagus and beans are tender – this should take 8-10 minutes. Serve immediately on a bed of brown rice.
BRAZIL NUT BRITTLE
- 440g/15 ½ oz/2 cups granulated sugar
- ¼ tsp bicarbonate of soda
- 190g/6 ¾ oz/1 ½ cups ground Brazil nuts
- 175g/6oz milk chocolate, melted
In a heavy frying pan, melt the sugar over low heat, stirring. Add the soda and 125g/4 ½ oz/1 cup of the nuts, and mix. Roll out on a greased baking sheet until about 5mm/%in thick. When cold, cover with the melted chocolate and sprinkle with the remaining nuts. Once set, Break into pieces.
