Sunflower seeds Recipes
SUNFLOWER SEED OAT BREAD (makes 2 small loaves)
- 500g / 1lb 2oz / 5 cups oat flour
- 6g / ¼ oz instant dried yeast
- 2 tbsp sunflower seeds
- 1 tsp salt
- 2 tbsp malt extract
- 400ml / 14floz /scant 1⅔ cups warm water
- 1 tbsp sunflower oil
Preheat the oven to 180° C/350°F/gas mark 4. Put the flour, yeast, seeds, salt and malt extract in a bowl and mix well. Add the water and oil. Form dough. Knead for 10 minutes; divide into 2 and place in loaf tins. Cover and leave for 30 minutes. Bake for 50-60 minutes until browned.
SUNFLOWER SEED TOPPING
- 1 tbsp groundnut oil
- 4 tbsp sunflower seeds
- 1 tbsp sesame seeds
- 2 tbsp walnut halves
- 1 tbsp soy sauce
- 2.5cm/1 in piece root ginger, peeled
Heat the oil in a wok until very hot. Add the seeds and walnuts, and fry for 30 seconds, stirring constantly. Add the soy sauce, and then transfer to a bowl. Chop and add the ginger. Serve sprinkled on rice or stir-fries.
- 125g/ 4 ½ oz/ 1 ¼ cups rolled oats
- 2 tbsp dried dates, chopped
- 2 tbsp dried apricots, chopped
- 1 tbsp pecan nuts, chopped
- 1 tbsp flaked almonds,
- 1 tbsp sunflower seeds
- 1 tbsp flaxseeds
- 1 tbsp wheatgerm
- 1 tbsp wheat bran
- 2 apples, peeled, cored and chopped
- Unsweetened soya milk, to serve
Combine all the dry ingredients in a bowl and top with the apple. Serve with the soya milk.
