Coconut Recipes

COCONUT BODY OIL (to moisturize the skin)

  • 80ml/ 2 ½ fl oz/ ⅓ cup coconut oil in a tub
  • 75 drops of your favorite essential oil

Remove the lid from the coconut oil and place the tub in a large pan with water; heat gently, until the oil liquefies. Add your favorite essential oil and stir well. Replace the lid and put the tub in the fridge for 15 minutes. Apply generously all over your body (but not to your face). Beware that the oil could stain your clothes, so avoid dressing until the oil has soaked well into the skin.

NON-ALCOHOLIC PINA COLADA

  • 500ml/ 17fl oz/2 cups pineapple juice
  • 200ml/ 7fl oz/ ¾ cup coconut water
  • 200g/ 7oz tinned pineapple in fruit juice
  • 55g/ 2oz creamed coconut

Put all the ingredients in a blender and whizz until smooth. Pour into a glass pitcher and stir well before serving with ice.

COCONUT RICE

  • 225g / 8oz/ 1 cup brown rice
  • 1 onion, chopped
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 2 tbsp coconut oil
  • 2 beef tomatoes, chopped
  • 3 tbsp desiccated coconut

Place the rice and 500ml/ 17fl oz/ 2 cups water in a pan and bring to the boil. Reduce the heat and simmer for 45 minutes. In another pan, fry the onion and spices in the oil for 3 minutes. Add the tomatoes and coconut, and simmer for 10 minutes. Mix well with the rice. Serve as a side dish.
