Easy Barley Recipe
LENON BARLEY WATER (for cystitis, constipation & diarrhea)
- 125g/4oz/ ⅔cup pearl barley
- 1l/35fl oz/4 cups water
- Grated zest of 1 lemon
- Clear honey, to taste
Bring the pearl barley to the boil in a pan with 240ml/9fl oz/1 cup of the water. Strain, and then add the remaining water and the lemon zest. Simmer until the barley is soft, adding water as required. Strain the liquid; sweeten with honey and leave to cool. Drink or keep in the fridge for up to 4 days.
BARLEY LOTION (to improve blood circulation)
- 100g/3 ½ oz/ ½ cup pearl barley, soaked for 24 hours in cold water
- 1l/35fl oz/4 cups water
- 1 generous handful fresh rosemary or 3 tbsp dried rosemary
Put the barley in a pan with the freshwater. Bring to the boil, cover and simmer for 30 minutes. Strain and discard the barley. Add the rosemary, cover and leave to infuse until cool. Strain into a glass bottle. Using cotton wool, apply twice daily. Store in the fridge for up to 4 days.
BARLEY and VEGETABLE SOUP
- 55g/2oz/ ¼ cup pot barley, soaked overnight in cold water
- 2 tbsp olive oil
- 1 onion, chopped
- 1 garlic clove, crushed
- 2 celery sticks, trimmed and chopped
- 1 tomato, chopped
- 1 tbsp paprika 55g/2oz green beans, chopped
- 1.5l/52fl oz/6 cups vegetable stock
- 1 tsp dried mixed herbs
Drain the barley and put it in a large pan. Add all the other ingredients, and then bring to the boil and simmer, covered, for about 1 hour.
