Artichoke easy Recipes
- 8 artichokes
- 4 large tomatoes cut into wedges
- 1 red onion, finely sliced
- ½ green pepper, deseeded and chopped
- 100g /3 ½ Oz / ½ cup green olives
- 1 garlic clove, crushed
- 6 tbsp olive oil
- 4 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and ground black pepper
If using fresh artichokes, break off the outer leaves and cut away the inner leaves. Scrape out the chokes and boil the hearts for about 20 minutes until tender. Rinse under cold water and combine in a large bowl with the tomatoes, onion, green pepper and olives. Whisk the remaining ingredients to make the dressing, drizzle over the vegetables and serve.
HOT ARTICHOKE DIP WITH PITTA BREAD
- 8 pitta bread
- 225g/8oz cream cheese
- 3S0g/12oz mozzarella cheese
- 200g/7oz/1 cup mayonnaise
- 150g/5½ oz/1 cup grated Parmesan cheese
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 375g/13oz/2½ cups marinated artichoke hearts
Preheat the oven to 180°C/350°F/gas mark 4. Cut the pitta bread into small triangles, and bake on a tray for about 10 minutes. Combine the other ingredients in a food processor and whizz. Put the mixture in a dish, and cook in the oven for 30 minutes. Serve hot with the pitta dippers.
