Globe Artichoke

This attractive and sophisticated vegetable is a form of thistle and a member of the daisy family. Recognized mostly for its detoxifying effects, globe artichoke protects the liver and supports the gallbladder, making it a useful vegetable for many traditional remedies.

Originating in the Mediterranean, artichokes are the unopened flower buds of a perennial plant. Each bud consists of several parts: outer leaves that are tough and inedible at the tip but fleshy and tender at the base; an inedible choke, or thistle, which is enclosed within a light-colored cone of immature leaves; and around, firm-fleshed base, known as the heart. Both the leaves and heart have a long history of therapeutic use.

Artichoke Health Benefits | Globe artichokes have traditionally been used as a hangover remedy and have detoxifying qualities. They are also valuable as a diuretic, helping to relieve water retention and high blood pressure. This makes them a useful addition to the diet of people suffering from conditions such as gout, arthritis and rheumatism. They have been used to lower blood sugar and to help to lower high cholesterol levels by inhibiting the production of more cholesterol. The antioxidant flavonoids they contain also help to keep the arteries healthy.

The ancient Greeks and Romans saw globe artichokes as a valuable digestive aid, and modern research has shown that their compound cynarin encourages the breakdown of fat as well as increasing the flow of bile and improving liver function. The hearts are particularly good for combating indigestion if eaten at the beginning of a meal. Cynarin also reduces the risk of gallstones and eases irritable bowel syndrome.

The high levels of B-vitamins in artichokes are beneficial for boost ing energy and mental alertness, and together with their vitamin C, play an important role in strengthening the immune system.
