Apricot Recipes

APRICOT CRUMBLE

  • 950g/ 2lb 2oz apricots, peeled, halved, pitted and roughly chopped
  • 70g/ 2 ½ oz/ ⅓cup sugar
  • 100g/ 3 ½ oz/ ⅔cup wholemeal flour
  • 25g/ 1oz/ ¼ cup oats
  • 2 tbsp demerara sugar
  • 55g/2oz unsalted butter, cut into small pieces
  • Crème Fraiche, to serve (optional)

Preheat the oven to 190°C/ 375°F/gas mark 5. Place the apricots in a baking dish. Sprinkle over 55g/2oz/ ¼ cup of the sugar. In another bowl, combine the remaining ingredients and rub together until the mixture resembles breadcrumbs. Cover the apricots with the crumble and cook for 40 minutes. Serve with crème Fraiche, if desired.

APRICOT MASSAGE OIL (for dry, sensitive skins)

  • 250 g / 9 oz apricot seeds
  • 750 ml / 26 fl oz/3 cups carrier (base) oil, such as almond or olive
  • piece of muslin

With a pestle and mortar, grind the seeds to release the oils, then place them in a clear glass jar. Pour the carrier oil onto the seeds, secure and shake. Place in a sunny spot and leave for 2 to 6 weeks. Pour the oil through a muslin-lined sieve into a jug, and then pour into dark glass bottles. Store for up to a year. Apply liberally to the skin when needed.
