Easy Apple Recipes
- 55g/2oz unsalted butter
- 4 tsp entrants
- 4 tsp sugar
- 4 tsp flaked almonds
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 2 cooking apples, peeled and cored
- 2 tbsp natural fromage frais, to serve
Preheat the oven to 180° C/350“F/gas mark 4. Combine all the ingredients, apart from the apples, in a bowl. Divide the mixture in half and stuff into each apple. Wrap the apples individually in foil, and bake for 20 minutes. Serve topped with fromage frais.
AGE-OLD APPLE AND LICORICE INFUSION
(for gastric, kidney & pulmonary conditions)
- 2kg/ 4 ½ lb apples, unpeeled and thinly sliced into rounds
- 1l/ 35fl oz/ 4 cups water
- 2 small pieces licorice root
Place the apples in a saucepan and cover with the water. Add the licorice root and boil for 15 minutes, then strain and discard the apple and licorice. Drink throughout the day.
APPLE, PEAR AND MINT JUICE
- 8 apples, cored
- 8 pears, cored
- 12 stems mint
Wash all the fruit, and then cut it into chunks, leaving the skin on. Feedthrough a juicer with the mint. Pour into large glasses and drink immediately.
- 1kg/ 2lb 4oz cooking apples, peeled, cored and sliced
- 2 tbsp honey
- ½ tsp ground cinnamon
- Pinch of nutmeg
- 8 slices of bread, buttered on both sides
Preheat the oven to 190°C/ 375°F/ gas mark 5. Heat the apples with 2 tablespoons of water in a pan, stirring until the mixture forms a thick puree. Stir in the honey, cinnamon, and nutmeg. Line the sides and base of a greased cake tin with half the bread, spoon the puree in and top with the other half. Bake for 30 minutes, until golden brown. Serve immediately.
APPLE AND APRICOT CRUMBLE
- 200ml/ 7fl oz/ ¾ cup apple juice
- 6 apples, peeled, cored and chopped
- 280g/l10oz apricot jam
- S5g/2oz unhydrogenated margarine
- 115g/4oz/1 cup rolled oats
- 3 tbsp oat bran
Put the apple juice in a pan and bring to the boil. Add the apples and simmer, covered, until the liquid is absorbed. Mash, add the jam and spread in an oven-proof dish. Work the margarine into the oats and oat bran to form a crumble. Spoon it over the fruit and bake at 180°C/ 350°F/gas mark 4 for 30 minutes.
