Easy Almond Recipes
ALMOND AND RAISIN MILK
- 225g/8oz/2 cups whole almonds (not roasted or salted)
- 1 handful dried raisins
- 455ml/16fl oz/scant 2 cups water
Cover the almonds with water and soak for 24 hours; drain and rinse. Soak the raisins in water for 2 hours, then drain. Put the almonds, raisins and the water in a food processor. Blend, then strain through a fine sieve and drink. Keeps in the fridge for up to 4 days.
ALMOND BANANA SMOOTHIE
- 150g/ 5 ½ oz/ 1 cup blanched almonds
- 2 small bananas
- a pinch of cinnamon
- 2 tsp vanilla extracts 2 tsp clear honey
Place the almonds, bananas and 500ml/17fl oz/2 cups water in a blender and whizz until smooth. Add the vanilla extract, honey and cinnamon, and whizz again. Serve.
- 2 large egg whites
- 175g/6oz/1 ¾ cups ground almonds
- 85g/3oz/ ⅓ cup caster sugar
- 1 tsp almond extract
- a pinch of salt
Preheat the oven to 180° C/350°F/gas mark 4. In a bowl, whisk the egg whites to form firm peaks. Fold in the almonds and sugar, then the almond extract and salt. Roll out and cut into 20 rounds. Place on a greased baking tray and bake for 20 minutes until golden. Cool on a wire rack.
RASPBERRY ALMOND BAKE
- 4S0g/1lb raspberry jam
- 1 egg beaten
- 5 tbsp brown rice syrup
- 100g/3 ½ oz/1cup ground almonds
- 4 tbsp sunflower oil
- 5 tbsp rice milk
- ½ tsp natural vanilla extract
- 4 drops almond extract
Preheat the oven to 190°C/375°F/gas mark 5. Spread the jam over the base of an ovenproof dish. Put the remaining ingredients in a bowl, mix well and spoon the mixture evenly over the jam. Bake for 40-45 minutes until golden and firm to the touch.
TRADITIONAL ALMOND MILK (to nourish the skin)
- 50g / 1 ¾ oz/ ½ cup ground almonds
- 2 tbsp clear honey
- 500ml / 17fl oz/2 cups still mineral water
In a bowl, combine the almonds, honey, and water. Stir well, until the honey has dissolved. Leave for 2 hours. Filter, and pour into a bottle with a lid. Apply generously to the face and neck with cotton wool, and leave on for 20 minutes. Use in the morning and evening. Keeps for up to 3 days in the fridge.
